Those of yall that run 1911's, do yall have the extended thumb safety? If so, do yall see the possibility of accidentally putting it on safe while shooting? I was shooting mine today, practicing my grip and noticed that without too much effort at all, I could skip it no safe. I am concerned that I may do this under recoil and break something.
Any thoughts?

I agree with the above. Stronghand thumb does more than just "ride" in my grip as there is some downward pressure and it is part of the grip. It pushes down on the safety as well as the base of my weakhand thumb if shooting freestyle.

Safety comes off as part of the draw, ideally on the push out to the target right before or as the hands are coming together and then thumb just stays there. Makes for a very clean and efficient motion once it is practiced and great control over the gun while shooting, with no worry of accidentally bumping the safety on.

Here's a picture of Rob Leatham (aka "TGO" or "The Great One") with his thumb over thumb grip up on top of the safety. Not a great picture but the best I could find in a quick search:
