    3686841E-50EE-4EA1-9FBA-7F49DF467255.jpeg 1 medium onion, chopped
1 bushel of kale (half one of those big bags)
1lb of sausage, I used pepper jack and green onion deer sausage
    1 bell pepper, chopped
    1 garlic toe, minced

You can remove casing and use crumbled meat or just cut the sausage up after it cooks.

I cooked the sausage in one pan on low heat and then cut it up and threw it back in the pan with the juices. Throw the onion and garlic in with some olive oil and sauté until onions are tender and semitransparent. Add kale and cook for 5-10 minutes, your call on tenderness. Enjoy.

Just out of curiosity since Kale became the roughage of
choice for the hipster crowd, is it any better than a variety
of green leafy veggies such as Turnips, Mustard or Collard
greens, all of which I love especially with good skillet corn
bread without any sugar added, thanks.

Most anything is better than turnips, mustard or collard greens.

Nothing beats the above mentioned w cornbread. I grew those right down from the kale. My collards didn’t do well for some reason. Seed might have been old or I didn’t cover it good enough.

Kale is good, like mustard over turnip. Really enjoy collards (but i prefer lightly simmering, then bake in oven with choice of meats, cheeses). Like turnips but probably the least of above (Except really like bulbs.)

My Grandmother used to do something similar to this with green leafy lettuce. She called it "wilted lettuce". My Papaw loved it. Me, I was more into turnip, collard or mustard greens.

What I really like, is to make 2 "pancakes" out of cornbread batter, then take some collard greens & Tabasco sauce to make a "collard green sandwich".

I think if you look, the overall nutrient value of turnips may be just a fuzz ahead of kale. Turnip greens are about the highest source of Vitamin A and K in the plant kingdom. Kale sounds cooler I guess.
I can eat kale Ok - but I prefer turnips (greens and roots) and collards.

Everything Californians cook, they're like "How can we add Kale to this?"
This is a pretty funny video of people trying Southern foods for the first time.
Biscuits & gravy is described as, "It's like a hug from the Lord."
