Dad grew up in El Paso. His mom grew up around Poplarville and Slidell. He made great creole style red beans, but no rice. We ate them a la mexicali; with softened, quartered corn tortillas. Just fold a piece of tortilla into a scoop and spoon on some beans. The two flavors are very complimentary. Still do it that way 1/2 the time, rice the other half.
